Hass Avocado
with Fresh Mozzarella,
Plum Tomato and Basil

(serves 8)

INGREDIENTS:   

• 1/2 cup olive oil

• 3 tablespoons red wine vinegar

• 1 garlic clove, minced

• 3 ripe avocados, halved, pitted, peeled, cubed

• 15 ounces (about) fresh mozzarella in water, drained, cubed

• 3 each plum tomatoes cut into wedges

• 1/4 cup chopped fresh basil

• salt and pepper
   

METHOD:

• Whisk first 3 ingredients in large bowl to blend

• Add avocados, mozzarella, tomatoes and basil and toss

• Season with salt and pepper
